Short answer: You don't.
Monster/NPC stat blocks are intentionally simpler than PCs, because there's not normally any reason at all to give them that level of detail. It's one of the things I most love about 5E; as a GM, I can plug-and-play a stat block on the fly for just about any encounter.

There's certainly nothing stopping someone from building up a quick DST for it.
