If you absolutely positively don't want them to ever touch them, you are out of luck, as they could just type in the edit URL and get there. But you could mark the edit icons as (display: none), then tag them as gm and (display: block).
It's considered a feature of the site, that anyone can edit anything on it, well accept any GM secrets, the GM is the only one who has access to that or making the NPC a secret NPC. Personally, I think it's a good thing that the PCs can edit things in the campaign, allows them to become more involved. Granted, if you have a player that wants to be a jerk, he can screw things up, but none of my players would want to spoil the game for the other members of the group so I don't worry about that.
